Spinach Ricotta Stuffed Chicken Breasts


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Directions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Cut a pocket into the side of each chicken breast and stuff evenly with the ricotta mixture. Secure with toothpicks if necessary.
  • Heat olive oil in a large oven-proof skillet over medium-high heat. Add the chicken and sear until golden, about 3-4 minutes per side.
  • Pour the chicken broth into the skillet around the chicken breasts.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  • Let the chicken rest for a few minutes before serving.

Cooking time: 30 minutes
Total time: 45 minutes
