Spinach Ricotta Stuffed Chicken Breasts
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Directions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Cut a pocket into the side of each chicken breast and stuff evenly with the ricotta mixture. Secure with toothpicks if necessary.
- Heat olive oil in a large oven-proof skillet over medium-high heat. Add the chicken and sear until golden, about 3-4 minutes per side.
- Pour the chicken broth into the skillet around the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.
