Here’s a recipe for when you need special weekend breakfast or brunch: Brioche French Toast! The name alone feels luxurious, and trust us: it’s just as good as it sounds. This type of bread gives a velvet, custardy texture to the popular breakfast. Top it with a dusting of powdered sugar and a drizzle of maple syrup, and it makes any morning special! This one is pretty hard to resist (and our pile of toast quickly disappeared over here!).

Ingredients for brioche French toast

Brioche is a French style of bread made with an enriched dough. The addition of eggs, milk, sugar and butter to the dough makes the bread light and fluffy and gives it a signature yellow color. This type of bread is ideal for French toast because the fluffy makes for lusciously custardy slices. It’s perfect if you love soft French toast (for a similarly custardy texture with some chew, try using challah bread, another enriched dough).

The method is similar to all French toast recipes. Coat the bread in a mixture of eggs, milk and sugar, and fry it until golden brown. Here’s what you’ll need for brioche French toast:

  1. Brioche bread
  2. Milk (whole or 2%)
  3. Sugar
  4. Vanilla
  5. Cinnamon
  6. Nutmeg
  7. Salt
  8. Butter

Where to find brioche bread

If you haven’t shopped for brioche bread before, don’t worry: there’s no need to make it homemade. Store-bought versions are available at most major grocery stores in the bread section. Many purchased brioche loaves comes pre-sliced, but you can also find whole or braided loaves.

Tips for making brioche French toast

Got your brioche and ready to go? Here’s how to make brioche French toast:

  • Whisk the egg mixture. In a wide shallow bowl or container, whisk together the eggs, milk, sugar, vanilla, cinnamon and salt.
  • Heat butter over medium heat in a large skillet or griddle. Most skillets or griddles can fit 4 pieces at once (or, use a very large griddle that fits 8).
  • Cook until each side is golden brown. The exact timing will depend on the heat and the type of pan.

Topping ideas

To us, the perfect brioche French toast topping is simple: just a sprinkle of powdered sugar and a drizzle of pure maple syrup. But if you’re entertaining to impress at a special breakfast or brunch, add a few more toppings to take it over the top! Here are a few ideas:

  • Fresh berries like raspberries, blueberries or strawberries
  • Banana slices
  • Apple, pears, peaches or plums
  • Fruit sauces like blueberry, raspberry, peach or strawberry sauce
  • Compotes like strawberry, blueberry, raspberry, or peach compote
  • Chocolate chips
  • Pecans, walnuts, hazelnuts, pistachios, or almonds, chopped
  • Crème fraiche
  • Whipped cream

  • 4 eggs
  • ½ cup milk whole or 2%*
  • 2 tablespoons sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon kosher salt
  • 8 slices brioche bread cut 3/4” thick
  • 2 tablespoons butter for cooking

2x

  • 8 eggs
  • 1 cup milk whole or 2%*
  • 4 tablespoon sugar
  • 4 teaspoon vanilla extract
  • 2 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon kosher salt
  • 16 slices brioche bread cut 3/4” thick
  • 4 tablespoon butter for cooking

3x

  • 12 eggs
  • 1 ½ cup milk whole or 2%*
  • 6 tablespoon sugar
  • 6 teaspoon vanilla extract
  • 3 teaspoon cinnamon
  • ¾ teaspoon nutmeg
  • teaspoon kosher salt
  • 24 slices brioche bread cut 3/4” thick
  • 6 tablespoon butter for cooking

Instructions
 

  • In a wide shallow bowl or container, whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg and kosher salt.
  • Preheat a griddle over medium heat and melt 1 tablespoon butter. Soak each side of 4 slices of bread in the egg mixture until it becomes saturated, about 15 seconds per side.
  • Place the bread on the hot skillet and cook 2 to 3 minutes per side, until browned.
  • Repeat with the remaining butter and 4 slices bread. Serve immediately with maple syrup and a dusting of powdered sugar (or toss both sides in cinnamon sugar, following the instructions in Cinnamon French Toast).
